How to grow adzuki bean sprouts

Adzuki beans can be sprouted in just a few days. They are high in protein and have a nutty flavour. The beans are often sweetened and used in red bean paste to flavour desserts.

To sprout, rinse the beans and then soak in cool water for 8-12 hours. Rinse, drain and place the beans in a sprouting jar, container or bag. Rinse them 2-3 times per day, for the following 2-4 days. Harvest when most of the beans have small roots. 

Once grown, dry and place the sprouts in a sealed container in the fridge. 

Soak: 6-8 hours

Rinse: 3-4 times a day

Grows in: 2-5 days
